Spinach and Radish Salad with Goat Cheese
serves 4
Ingredients
- 4 t white wine vinegar
- 1 T olive oil
- 1 t honey
- 2 C radishes, thin slices
- 1 T fresh oregano, chopped
- 4 C baby spinach
- 2 oz goat cheese, crumbled
Instructions
- Whisk together the vinegar, olive oil, honey and oregano, then season to taste.
- Toss the spinach and radishes in the dressing.
- Plate, garnish with goat cheese, and serve chilled.
